Butternut Squash Soup

This has become one of our staples. Everybody likes it & it’s pretty simple.

1 Butternut Sqash (cubed)

3 C chicken broth

1/2 onion

3 garlic cloves (minced)

1 tsp cinnamon

1/2 tsp cayanne pepper

1 tsp salt

1 tsp black pepper

3 TBSP butter

8oz cream cheese (softened)

3C cooked chicken (shredded or cubed)


Cut & peel butternut squash. (Remove guts & seeds from the center) Put chicken broth & squash in pot & bring to boil. Reduce heat & simmer until squash is soft. While simmering add onion, garlic, cinnamon, cayanne pepper, salt & pepper. Once squash is soft, mash with potato masher. Add cream cheese, butter & chicken. Reduce heat to low. Heat until cream cheese & butter are melted & mixed in. Top with favorite hot sauce or pepper jack cheese & parsley.
