Keto Spaghetti Carbonara

I made this on a whim a few weeks ago and its become one of our favorites. All the creamy, bacon goodness without the pasta!

Ingredients

Spaghetti Squash, 1 whole

Bacon, 5-6 pieces

Onion, 1 whole

Garlic, 3 cloves

Bacon Grease or Oil, 1 TBSp

Cream Cheese, 1 block

Mixed Greens or Spinach, 2 cups

Water, 1 cup

Parmesan Cheese, for topping

Directions

Pre-heat oven to 425

Slice spaghetti squash in half, scrape out seeds.

Place spaghetti squash & bacon in oven for 25 minutes.

Heat oil in pan. Sauté onions, garlic & mushrooms until soft.

Once onion, garlic, mushroom mixture are soft, reduce heat. Add cream cheese and water. Let simmer and stir occasionally, creating a sauce.

When bacon is crispy, remove from oven. Let cool, cut and add to sauce mixture.

After bacon is added, remove sauce from heat.

Remove spaghetti squash from oven. Scrape out intestines with fork. Place in bowl, add sauce mixture. Add mixed greens and stir to combine all. Add parmesan cheese to top. Salt & pepper to taste.
