Every breakfast should start with some proteins, fats and a complex carbohydrate in our house. We add in fruits or veggies in a smoothie too. This was a delicious hit one morning when it’s pretty much all we had in the house. When in doubt, make a frittata or a hash. They always do the trick.
1 lb ground sausage
5 sweet potatoes; chopped
soft boiled eggs
Boil the eggs according to your usual directions. I use my Insant Pot, like I share in this post . Brown ground sausage Place 2 TBSP butter in skillet. Chop and sauté in pan. Combine sausage and sweet potatoes together and stir. Place a soft boiled on top before serving. Salt and pepper to taste.
