I’m a nacho girl. Always have been and you betcha I’ll try the nachos anywhere I go. When we decided to move towards a more plant based lifestyle, I had to figure out a way for nachos to still make the cut. Here’s what I came up with. Basically, everything except the cheese. You know what!?! They’re delicious and I ALMOST don’t miss the cheese.
We’ve done this with tacos too and they’re yum as well, just add mixed greens & tomatoes.
