Keto Shepherds Pie

Delicious, healthy and easy! You know it’s good when it’s filled with veggies AND the kids still come back for seconds.


2lbs ground beef, browned

2 heads of cauliflower, chopped

2 Green Peppers &/or any veggies, chopped

2 Tbsp Olive Oil

1 Sour Cream Container, 16 oz

1 can Tomato Sauce, 8oz

1 C shredded mozzarella cheese

In one skillet brown ground beef.

In second skillet add oil, cauliflower and green peppers. Cook all until soft.

Mix sour cream and tomato sauce

In 13×9 casserole dish layer ground beef then vegetables.

Pour sour cream mixture over vegetables.

Top with shredded cheese.

Bake at 425 for 20 min or until cheese melted.

Salt and Pepper to taste


Sticky Free Fruit Fingers

My boys have many similarities and also many differences, as most families do. When it comes to texture, one is more sensitive than the others. He has always been a super clean eater, while the others will walk around with food on their faces. No worries for them!

When it comes to fruit, sticky hands can cause him to steer clear. The other day we had some kiwis on hand. He wanted one, and my thought was, “how am I going to make this easy for him to eat?”. Obviously, I wanted him to enjoy the deliciousness of the kiwi and get all of the nutritional benefits. I knew that the juicy fruit wouldn’t fly for his fingers though.

Ah ha… I peeled the kiwi and stuck it on a fork! It was a success. He even came back for more. I prefer to create as few dirty dishes as possible, and want to encourage them to choose healthy options. Stay tuned for some more posts like this, as it comes up often.

Keto Spaghetti Carbonara

I made this on a whim a few weeks ago and its become one of our favorites. All the creamy, bacon goodness without the pasta!


Spaghetti Squash, 1 whole

Bacon, 5-6 pieces

Onion, 1 whole

Garlic, 3 cloves

Bacon Grease or Oil, 1 TBSp

Cream Cheese, 1 block

Mixed Greens or Spinach, 2 cups

Water, 1 cup

Parmesan Cheese, for topping


Pre-heat oven to 425

Slice spaghetti squash in half, scrape out seeds.

Place spaghetti squash & bacon in oven for 25 minutes.

Heat oil in pan. Sauté onions, garlic & mushrooms until soft.

Once onion, garlic, mushroom mixture are soft, reduce heat. Add cream cheese and water. Let simmer and stir occasionally, creating a sauce.

When bacon is crispy, remove from oven. Let cool, cut and add to sauce mixture.

After bacon is added, remove sauce from heat.

Remove spaghetti squash from oven. Scrape out intestines with fork. Place in bowl, add sauce mixture. Add mixed greens and stir to combine all. Add parmesan cheese to top. Salt & pepper to taste.
